Strawberry and Blueberry Compote
I made this this morning as I had a huge box of strawberries that were about to turn and some frozen blueberries. It’s great as the kids think it’s a Fruit corner yogurt (you know the one I am talking about). It also is super quick and easy and a great way to use up any berries/ apples/ pears that you have left in the fridge/ fruit bowl. Other ways to serve; with oats (oh hello quick crumble), over ice cream, over pancakes or waffles… you name it.
- a couple of big handfuls of strawberries (fruits can easily be substituted to whatever you have left)
- one big handful of blueberries
- approx 2 spoonfuls of maple syrup (add as much or as little according to how sweet you like it)
- lemon zest (about half the lemon)
Put all ingredients in the pan. Put the lid on the pan (saves energy) and put the heat on as low as it will go. Simmer about 20 minutes. Check occasionally and give it a wee stir if necessary.
Once it’s all softened give it a mash up with a fork (I blitzed mine as the kids are weird with bits) and then either serve straight away or store in glass jars in the fridge. It will keep for a couple of days.
