Mary Berry’s Banana Bread
Dare I say fail safe? Seriously, if i can make it anyone can!
- 100g softened butter
- 175g caster sugar
- 2 ripe bananas
- 2 large eggs
- 225g self raising flour
- 1 tsp baking powder
- 2 tbsps milk
If you are like me and you use a mixer then basically put everything in the mixer and give it a good mix up.
Alternatively if you don’t have a mixer; cream the butter and sugar till light and fluffy. Then add the eggs and the bananas (mashed). Once combined add the flour bit by bit. Then add the baking powder and a little milk to loosen. The mix should be thick but runny (ish).
Line a baking tin with parchment and grease and bake at 180 degrees for approximately 55 minutes – 1 hr. If you stick a skewer or knife in the middle it should come out clean.
If you keep it in a sealed container it keeps well, for a few days. In my house this never happens!!
